12/50 – 饺子 Filled Holidays and the Students that Care

It seems like the main celebration for almost every holiday in Henan province involves eating ‘dumplings.’ In English, these small, deliciously crafted treats are often referred to as pot-stickers. They are spectacular! But unfortunately 9 times out of 10 they are not vegan. Last December for the Winter Solstice my reading students spent an evening making jiaozi. They invited Marlie, Josh, Ben and I to the festivities and we really were made to feel at home. To my great surprise, they had prepared a vegan friendly filling for me, and as such I had the chance to eat jiaozi and enjoy the holiday along with everybody else. It was a lovely day. I will miss jiaozi. I will miss the students that really care.
